The maple and the Amarillo hops go well together. Be warned: This is a strong one.
Ingredients:
3 lbs. amber malt extract
3 lbs. dark malt extract
1 lb. crystal malt, 40° lov
1 quart (3 lbs.) maple syrup
1 oz. Amarillo hops
1 oz kent goldings
1 pacs Safale US-04 yeast
3/4 cup sugar
Step by Step:
Steep grains in 1 gallon water @ 160° F
Hold 15 minutes, remove grains.
Add dark malt extract, 1 oz amarillo hops and maple syrup.
Boil 30 minutes.
Add amber malt extract
Boil 15 more minutes (45 min)
Add 1 tsp Irish Moss
Boil 5 more minutes (50 min)
Add 1 oz kent goldings hops
Boil ten more minutes (total boil 60 min)
Add yeast when cool
Ferment for a week, rack to secondary, keg a week later
