TRASH Licorice Wheat from the Big Pour

Posted in

Does anyone recall the licorice wheat style beer that TRASH served up towards the end of the later session at the Steel City Big Pour last year?

I recall that it was one of my favorite beers that year. But what I don't remember is whether it was a licorice witte or a licorice wheat. Wit yeast? Hef yeast? Can someone refresh my memory? Maybe even provide the recipe?

Thanks.

Licorice Wit

I made the licorice wit. Yes, it was a standard wit beer made with White Labs 3944 yeast. The licorice flavor came from star of anise. I made an extract by soaking it in vodka for a week or so. I then added enough extract to the beer to get the flavor I wanted (some would say I overdid it). I have the recipe at home and will post it some night this week. I know it was a 20-gallon all-grain batch. I added different extracts to each 5-gallon keg.

Keith, did you still add the coriander as well as the star anise? And the bitter orange is still in there, or did the anise replace both?
