I've been dealing with a nasty off taste in my hoppy beers for far too long and it's really starting to discourage me from brewing.
I would describe the off-taste as cabbagey or even possibly metallic. I thought it was DMS, but took all the proper precautions to eliminate this as the reason. Now I think I've narrowed it down to one of two things...either I'm not storing my hops properly (vacuum sealed and frozen)...or I am using bad CO2 to force keg my beers. I'm leaning toward the latter.
My question to the group is this...
Where do you refill your CO2 tanks?
I've used both of the following and have gotten this off taste with both to varying degrees:
Butler Gas in Verona...and...
Greco Gas in Tarentum.
Anywhere else I can go to get a refill and hopefully eliminate this as a source of the off-taste??
Thanks!!
I get my tanks filled at
I get my tanks filled at alloy oxygen in the southside.
However, I don't think its the CO2 that is giving these flavors. How does your beer taste before you fill your keg? do you get those flavors before you force carb them?
what kind of hops are you using? and how old are they? where did you buy them?
CO2 off flavors
Well the scientist in me says eliminate the suspected source. Borrow some CO2 from a TRASH member and/ or let them force carb it for ya. Secondly - split a batch - bottle condition half or a portion of a batch and compare. Obviously I haven't tasted it but would also try to ruleout infection from your equip. Not much can cause your co2 to go bad. Lastly, try to "scrub" the beer with co2. Switch your lines so the gas is connected to the beer-out (black) connection and attempt to drive off the off flavor by purging with co2. Most volatiles (ie DMS) will at least be lessened this way. If done with another's co2 then yours could be guilty. If done with your own and it works... your issue may be dms (suspicions would lead us to faulty grain or the boil) or could be the mineral make up of your water. If scrubbing doesn't work....My vote is infection(cabbage), water (metalics or cabbage), bad hops cabbage), or equipment (cause of metalics).
