OBAMA ALE (aka White House Porter, a cherry vanilla porter)
I was thinking of brewing something for the new presidency. Depending upon your political persuasion, you will either be celebrating or drowning your sorrows with this beer. The base recipe was adapted from a fruit beer recipe in Palmer & Zainasheff's "Brewing Classic Styles," but it could be classified as a flavored robust porter. "White House Cherry" is a classic ice cream flavor of vanilla ice cream with bits of marachino cherries in it. I couldn't find any 'cherry vanilla porter' recipes online or in books, yet because of the polical winds of change, this one seems like a natural....."one for the books," as they say....

Boil-60min
Fermentables-
11.75lbs American 2-row malt
1.5lbs Munich malt
1lb Crystal (40L)
0.75lbs choc malt
0.5lbs black patent malt
Mash for 1 hour at 154'F

Hops- Kent Goldings 4.8%AA, 1.6oz (60min)
Yeast- White Labs WLP001 California Ale (make a starter)
1 Whirlfloc tablet (15min)

Extras- Sweet cherry puree, 3lb can
Five vanilla beans, sliced lengthwise then cut into 1/2" pieces and covered in bourbon for 2-3 days.

Ferment at around 65-67'F. When primary fermentation winds down, rack to secondary fermenter on top of the Extras. Give about 2-3 more weeks in the secondary. I'll update the recipe after it's finished and tasted!!
The Great Pumkin
A rich, smooth pumpkin ale with a nice sweetness and spiciness...
Ingredients:
5 gal water
6.6 lbs amber Dme
1 lb. crystal malt,
40° to 60° Lovibond
1 oz. Willamette pellets
1 oz. Styrian Goldings hop pellets
2 lbs. canned Libby's all-natural pumpkin
3 cinnamon sticks
1.5 lb. honey
Safale s-40 English Ale Yeast
3/4 cup sugar for priming
Step by Step:
* Add crystal malt (in bag) to 2 gals. cold water.
* Slowly bring to 170° F.
* Remove grains
* Bring liquid to boil
* Add extract and pumpkin
* Add Willamette hops
* Boil for 30 minutes*
* Add Styrian Goldings hops.
* Add Honey
* Boil for 15 more minutes
* Add all 3 cinnamon sticks
* Total boil is 45 minutes.
* Remove from heat and cool.
* Add water to make 5 gals.
* Pitch yeast.
* Prime with corn sugar.
* Primary ferment 18 days
*Secondary 3 days
Blue Beer E Honey Wheat
Ingredients:
* 5 gal water
* 6 lbs. Barvarian Wheat DME
* 1 ½ lbs Honey
* ½ oz. Cascade hops
* ½ oz. Kent Goldings hops
* 1 tsp Irish Moss
* 1 pac Windsor Brewing yeast
* 1 ¼ oz Crosby & Baker Blueberry Flavoring
Step by Step:
* Bring 2 gals water to boil
* Add 3 lbs DME & Cascade
* Boil for 30 minutes*
* Add 3 lbs DME & Honey
* Boil 15 minutes add Irish Moss
* At 58 min add Kent Goldings
* Total boil is 60 minutes.
* Remove from heat and cool.
* Add water to make 5 gals.
* Pitch yeast.
* After another week rack and flavor with Blueberry Flavoring
* wait another week and keg
* Prime with corn sugar.
